Recipe: Ekādaśī Instant Mashed Potatoes for Those with No Time

If so, then this recipe may be for you!

I used to think that the only way to make mashed potatoes taste good was to serve them with sour cream. Boy, was I wrong! The following recipe is so delicious that I wouldn’t mind having it every day until the whole bag of instant mashed potato flakes was gone!

This recipe uses a microwavable, disposable paper bowl¹ and a disposable plastic spoon¹ as the only cooking / eating utensils. It does not require any perishable ingredients such as fresh vegetables or dairy products (Butter will keep for months in the freezer!), so you only need to stock up on groceries once every few weeks!


1. Add ¼ teaspoon of salt to a 20 oz. disposable paper bowl¹. (If you are using unsalted butter and/or you plan on using sour cream as a condiment, you might want to add ½ teaspoon of salt.)

2. Add ½ teaspoon powdered basil.

3. Add ½ teaspoon chili powder.

4. Add ½ teaspoon ground turmeric.

5. Add ¼ teaspoon ground cumin.

6. Add ¼ teaspoon ground coriander.

7. Using the measuring spoon, smash the lumps, and then rock the bowl from side to side in order to distribute the spices somewhat evenly.

8. Add 2 tablespoons (¼ stick) of butter.

9. Microwave until the butter is completely melted.

10. Rock the bowl from side to side until all of the spices are wet with melted butter.

11. Add ½ of a 12 oz. can of evaporated milk². (Before opening the can, shake it well. Also, for the sake of accurate measurement, remove the top completely.)

12. Add ¼ cup of water.

13. Add ½ cup of instant mashed potato flakes.

14. Mix using a disposable plastic spoon¹.

15. Using your fingers, break off chunks from a solid block of American style cheese, such as Kraft® Velveeta, placing them in a pile in the center of the bowl on top of the mashed potatoes. (optional)

16. Microwave on high for 2 minutes.

17. Serve while still warm including the plastic spoon.

18. Serve with sour cream as a condiment. (optional)


¹ At Wal-Mart®, I’ve purchased Dixie® brand 20 oz. microwavable paper bowls in packages of 30 for US$2.97 and Diamond® brand plastic spoons in packages of 48 for US$.96.

² If you don’t have any evaporated milk, then 1 cup of water plus ½ cup of powdered milk or 1 cup of tomato juice plus ¼ cup of powdered milk could be substituted for the evaporated milk and the ¼ cup of water.
